Marathon Announcement

Sorry for not blogging yesterdays eats – I was to busy planning this new project that I am starting for the summer.

I am running the City of Oaks Marathon in Raleigh on November 1st!!   

I am so excited. As I looked at my schedule for the summer, I realized that I will have a lot of free time. I ran a marathon a year ago, but I didn’t enjoy it (and didn’t do as well as I could have!) because I had bronchitis as I was running it. I realized that this summer might be the perfect time to train for another one!

I will be training with Hal Higdon’s intermediate Marathon Training Plan. As of right now, I have 25 weeks until the marathon. I am super excited! My goal is to run in under 4 hours.

What a great, beautiful day was yesterday!

I woke up at 9, finished writing a french paper, and had breafkast

Berries & Fage 2% with sliced almonds – yum! Iced coffee w/TJ’s vanilla soy milk on the side.

After I turned in paper, I headed to the gym. I worked out on the elliptical for 45 minutes and “ran” exactly 4.0 miles. I then came home and did the 30 day shred (level 2)! I have a love/hate relationship with Jillian Michaels. It felt so good to get such a good workout in, but it sure as hell isn’t easy.

I then showered, dressed up in a nice sundress (gotta live up the weather!) and headed for lunch with my girlfriends. I had a tuscan turkey sandwich (sorry – no pictures!) on a ciabatta role, with turkey/buffalo mozarella/pesto/organic greens/tomato. Sooo good! This was at Alpine Bagel, the popular eatery on campus, and I had had this sandwich back in April when the boy was visiting. I had been craving it ever since! It is a bit indulgent, but i was so worth it. We then headed for yogurt pump, an incredible place with froyo. I had a  frozen peanut butter and chocolate yogurt in a homemade waffle cone - yum! 

At about 5 Pm or so, I had a snack: Grapes & An Ambrosia apple. I love this mix!

I wasn’t very hungry for dinner, but at about 10 PM I dove into this beauty – frozen banana & crunchy almond butter sandwich (on arnold’s, of course!) and berries/fage on the side. Yum!! I had it with decaf chocolate hazelnut tea w/a touch of unsweetened almond milk.

Guess Who Is Back?

Now that I am practically done with my finals and allergies, I am ready to food blog! 

Breakfast: Pumpkin Oatmeal w/8 g of Dark Chocolate Dream, Iced Coffee w/Vanilla Soy Milkimg_16271

Lunch: Homemade Bean Burger (Soooo easy to make. I just put 1/2 a cup of black beans, 1 tbsp of whole wheat flour, one tbsp of BBQ sauce, and onion & garlic powder and S&P) on Arnold’s Mutli-Grain with Tomatoes/Pickles/Lettuce/Ketchup

Dinner: Shrimp, Broccoli, Red Onion, Mushroom, and Tomato Stir Fry

As exercise today, I walked 2.5-3 miles (not exactly sure how many). It was lovely and it energized me for the day. I had not gotten a lot of sleep the night before and did not feel like exercising, especially since I had a paper due midnight and another due tomorrow morning. Boy, I am sure glad I did – it energized me for the rest of the night!

Blog Hiatus

I have decided (because of illness and finals) to post-pone blogging for a week and a half. I will be back!

And the veggie/fruit craze continues…

For lunch, I had an Amy inspired sandwich (hummus & spinach) on Arnold’s bread with an asian pear. I took it to school & had it with an (unpictured) iced coffee w/skim milk:

In class today, I got an email saying that my honors thesis topic has been approved by the Psychology Department. I can’t say much about the topic,  but I can tell you that it relates to eating disorders. I am very excited about it! 

When I got home at 5 PM, I was slightly hungry and I had one of my favorite snacks: grapes & grape tomatoes!

I am still sick and I absolutely cannot wait to get better, so I can – among other things – start working out!

Crack Oats

First off, sorry for not posting dinner yesterday. I was not feeling well and did not have a lot of energy to post here.

I did however, eat what was below. x 2. That’s right, I was up late doing homework and got hungry again so I decided to have the same thing over again. Since dinner was on the small side, I didn’t feel too bad about it.

And for breakfast today, I was craving pumpkin oats. So, I had them with Nutella. You will probably see them a lot in this blog… I call them crack oats. I am obsessed with them:

Like a Chicken…

Generally, my weeks are quite hectic. I run around like a chicken with it’s head cut off! I woke up at 7, worked all day, came home at 5 and I am now doing some homework before heading out for my Business Fraternity Meeting!

I am quite unhappy with the way I look lately. I have gained around 5 pounds in the last month because I stopped working out (due to being upset because of some personal issue & having a lot of work!) and now I can’t get back into it because of allergies. I know I am technically not overweight, but I don’t feel as comfortable in my own skin and my clothes are all tight!

As for food:

I have been eating veggies like crazy today! Maybe I am craving them because I am sick.

I received great news regarding summer plans, and I think I am all set. I will be continuing my one week old job at a lawfirm that pays more than I could hope for as a sophomore in college, and a really intersting internship (e.i. – no secretarial work!)  with a local company. I will be working 50 hours a week – but I will earn a lot of money (law firm) and get great experience (startup). 

This will allow me to not work during my junior year in college while taking lots of hard classes. Hopefully the experience at the startup will enable me to get an internship in Wall Street next year, provided the economy improves, *fingers crossed* which has been my dream!  

I only hope I don’t get lonely this summer, as most of my friends will not be in town (and my boyfriend is now backpacking through Europe!).. I am quite scared of it, to be honest.

Pumpkin Oatmeal

Today for breakfast I had… Pumpkin Oatmeal! My favorite. With two cups of coffee with vanilla soy milk:

Because I was going to go to lunch with my friend Megan in three hours, I decided to add chocolate chips to it instead of nutella so I wouldn’t be too full for that. But I could barely taste them! 

And I am officially sick as a a dog. Yesterday I fell asleep after 30 minutes of watching Magnolia.. I think I am going to finish it today! 

My plan for today is

- Study for Decision Theory Final

- Lunch w/Megan at EarthFare (I LOVE that place! IMO, they have a better salad better than Whole Foods)

- Shopping w/Megan if I don’t feel like I am about to die of sickness. I need to get a chair for my balcony to enjoy the great weather.

- Finish studying for PSYC433 Final

I was planning on running, but I have been feeling awful due to what are probably allergies, so instead I walked about 3 miles. Then I had dinner: A not so good wrap, pink lady/oranges, and fage 2% (forgot to take a picture!) for dessert
